Beets have been always my go-to veggie along with carrots. I love eating them raw, boiled, grilled, and even pickled! and this summer has been beet heaven for me as my aunt had a massive beet harvest this year.
Beets are amazing! they are not only healthy but they also taste great. My go-to beet recipes will always be salads and smoothies. I love adding them to salads and if you are a picky eater and not a fan of that earthy taste of beets then you may want to give them a try and make this delicious cooked beet and cucumber salad!
This salad is a basic, simple, and typical summer garden salad but adding soft cooked beets and green olives was a great addition and it makes the perfect side salad for all your grilled goodies!
What you need for this beet and cucumber salad.
This is the easiest salad recipe you can ever make and the quickest if you have pre cooked beets prepared in advance. It’s also made with ingredients you can find in your kitchen anytime! All you need for this recipe is:
- Cooked beets
- Cut green olives
- olive oil, lemon juice, salt and pepper for dressing
How to make beet and cucumber salad
First thing you need to prepare the veggies in advance by peeling them, if necessary, and cutting them into medium size wedges.
Bring a mixing bowel and add all the ingredients except for beets.
Prepare the classic salad dressing by adding the ingredients to a mini bowl and whisk until you reach a thick consistency. Another way is you can add the dressing ingredients to a jar and shake it well until you have the required consistency and it’s ready to go!
Add the dressing to the ingredients in the mixing bowl, toss everything together until well coated.
Last step, place cut beet on top of the salad. You can decorate it as you like there is no rule here really!
How beets are good for you?
Beets are absolutely amazing when it comes to their nutritional value. They serve a generous amount of vitamins, minerals, and protein! Beets are also known for enhancing some health properties such as improving your digestive health, improving physical performance, stabilize blood pressure, reduce inflammation and the list goes on which makes this vegetable a superfood!
How to cook beets
There are different ways you can cook beets with. For this recipe, I boiled the beets in a pressure cooker for about 40 minutes. To boil the beet, first you to prepare a generous amount of boiled water, cut the tops of the beets, and prepare your pressure cooker or a large saucepot. Add the beets to pressure cooker/ sauce pot and cover with pre-boiled water. If you wish to prevent the beets from bleeding, add two tablespoons of lemon juice or vinegar. Boil for 35 minutes on a pressure cooker and for an hour on a saucepot. After the beets are tender and done, transfer to a bowl full of cold water. Set for five minutes before peeling the skin, this method will help you get the skin off easily!
Can I use grilled beets or pickled beets for this salad recipe?
Grilled beets are also a great choice for this recipe. If you want that smokey touch to your salad then grilled beets are a good choice!
Pickled beets can be a bit strong for this salad as they tend to be a bit vinegary. However, if you are a big fan of pickled beets you can add some along with pre-cooked beet.

Beet and Cucumber Salad
- 1 big-sized beet boiled, cut into wedges
- 1 big-sized tomato rip, cut into wedges
- 1 cup lettuce chopped
- 1 big-sized cucumber peeled, cut into wedges
- 1/4 cup of green olives cut, boneless
- 1 tbsp olive oil extra virgin
- 2 tbsp lemon juice freshly squeezed
- 1/4 tsp pepper
- A pinch of salt
- In a mixing bowl, add all the ingredients except for the boiled beets.
- Add olive oil, lemon juice, salt and pepper to a mini bowl and whisk until thick and well combined.
- Add the dressing to the ingredients in the mixing bowl. Toss everything until well coated
- Transfer to your preferred serving bowl or plate. Place the beets on top of the salad to your preference.
- Serve immediately or store for later.
