Olive Oil Barley Brownies

These deliciously moist olive oil brownies are super rich in flavor with the nutty flavor of barley flower and the fruity, fresh taste of olive oil! Making it not only delicious but also healthy!

  • 190 g (1 cup + 1/4 cup) Barley flour
  • 3 tbsp Dark cocoa powder Unsweetened
  • 1/2 tsp Baking powder
  • 1/2 cup (125 ml) Olive oil Extra virgin
  • 2 Eggs
  • 4 tbsp Honey Organic
  • 50 g (3/10 cup) Chocolate chips Dark, Unsweetened
  • 3 tbsp Warm water


  • Pre heat the oven to 250°
  • Prepare your baking sheet by lightly covering it with butter then place parchment paper on top of it.
  • In a mixing bowl, add sifted barley flour and baking powder. Mix all the ingredients and set aside.
  • In another bowl, add the cocoa powder with three tablespoons of warm water. Mix until well combined and completely dissolved. Add eggs, whisk thoroughly then add honey and olive oil. Mix until combined.
  • Add sifted barley flour and baking powder. Combine lightly until coated and mixed. Don't over combine the batter!
  • Pour the brownie batter on the baking sheet and sprinkle chocolate chips on top of it. Bake for 20 to 25 minutes or until firm and sit in the center. (test with a toothpick).


Store in a dry and cold place or in the fridge.
Store in an airtight container.
