Melon Salad with Cucumber and Plums

  • 1 quarter of a melon medium-sized
  • 2 plums medium-sized
  • 1 cucumber semi peeled, medium-sized
  • 1 tomato medium-sized
  • 1/4 cup dried apricots (optional)


  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • pinch of salt


  • Start soaking dried apricots in warm water to soften.
  • Cut your fruits and vegetables into medium-sized wedges.

  • Transfer the ingredients to a mixing bowl and set a side.
  • Add the dressing ingredients to a mini mixing jar and shake or whisk well until well combined.

  • Add the dressing to the rest of the ingredients and toss lightly until well coated.
  • Transfer to a serving plate or salad bowl.
  • Chop the softened dried apricots into medium-sized pieces and top them separately on the salad.
